Delicious Chicken Fajitas

It takes 40-45 minutes only (5 minutes prep time, 35-40 minutes cook time)

Fajitas are often cooked really quickly in a skillet or on a griddle, but what if you don’t want to babysit the stove? This baked version takes a bit longer, but it’s less hands-on. All you need to do is season your chicken in a spice mix (cumin, garlic, onion powder, salt, paprika, and chili powder), and top with tomato, bell pepper, and slices of onion. That bakes for 35-40 minutes, until the chicken is cooked through. Serve with low-calorie tortillas!

Ingredients:

  1. tablespoon cumin
  2. teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon paprika

½ teaspoon chili powder

1 pound boneless skinless chicken breasts

1 cubed tomato

1 sliced yellow bell pepper

1 sliced sweet onion 4 reduced-calorie tortillas

Instructions:

  1. Preheat your oven to 375-degrees.
  2. Grease a baking dish.
  3. Mix dry spices in a bowl.
  4. Slice your chicken into thin strips, then coat with the spice mix.
  5. Put seasoned chicken in your baking dish, and top with the tomato, bell pepper, and onion.
  6. Bake for 35-40 minutes, until chicken is 165-degrees.
  7. Wrap chicken and veggies in low-calorie tortillas, and enjoy!
